Lavender Lemonade - Oakwood Natural Living

This is one of many recipes that can be found to make Lavender Lemonade.  We found this one to be pretty simple.

You will need:

6 cups of spring water

1/2 cup of light colored raw honey

1/3 cup of dried organic lavender buds

1 cup of fresh lemon juice without pulp

Warm the water and honey in a pot over medium high heat just until the honey dissolves. (Do no boil).  Gently crush or bruise the lavender with a mortar and pestle.  You can also us a bowl with the back of a spoon to do this.  Add the bruised herb to the pot, then remove the pot from the heat source.

Cover, refrigerate and steep for 2 hours.  Then you will strain the herb from the liquid through a fine mesh sieve or through a cheesecloth.  Then you will stir in the lemon juice and serve over ice.

Test for sweetness.  If the honey doesn't make it sweet enough for you then add organic raw cane sugar or stevia.
